Climatic conditions affect the rate at which the peas mature. Drier conditions often result in a crop with variability in age and hence the earlier matured peas start fading by the time the rest of the crop is ready for harvesting. This natural variation gives rise to circumstances where there are some blonde coloured peas in amongst the green split peas.
