Our allergen statements are derived after careful evaluation and risk analysis of the raw material, the supplier’s premises, and also our own.
We have a full allergen control program at Ward McKenzie which comprises of:
- Separation of all allergenic ingredients into allergen labelled racking.
- Colour coding of cleaning equipment to keep equipment segregated for each allergen type.
- Cleaning instructions which incorporate wet washing when changing for an allergenic product to a non or to a product with another allergen.
- Induction training on importance of allergens and information on allergens specific to our site, with annual refresher allergen training.
